“Ebony” is more than a name

Long before Ebony became a modern bistro in Sydney CBD, this site was home to a historic piano factory – a place where artisans shaped wood and metal into instruments that brought music to life.

That legacy of craftsmanship, care, and quiet beauty still resonates through everything we do. At Bistro Ebony, we bring that same artistry to the table – thoughtful, precise, and a little bit romantic.

Every plate, every pour, every gathering is composed with intention.

We’re French-ish, Italian-adjacent, and guided by the classics – but never bound by them.

It’s food that feels familiar, but never ordinary.
